As Boca Paddle’s Opening approaches, we can’t help but get more and more excited for all the offerings our club will bring to the table… literally.

We are excited to introduce Chef Michael Schenk, Culinary Director of Boca’s beloved Farmer’s Table. Michael is a Certified Executive Chef with more than 30 years of international culinary experience. He’s worked at Michelin-star restaurants in Europe and elevated New York City establishments where he developed his expertise in seafood cuisine. He brought his skills and vision to clubs in both New York and Florida, including the Polo Club of Boca Raton.

In 2017, he became the Culinary Director of Farmer’s Table, where he champions a clean, health-forward dining approach using fresh, seasonal ingredients.

Let’s get to know Michael better…

 

How did your love of cooking begin?

My path to becoming a chef was not necessarily a definitive choice at first. In my younger years, I had to provide for myself quite often, cooking a simple meal from what we had. When it came to decide on a profession to learn, it was almost a given to try a career as a Chef. 

Within my first few months of cooking, it quickly became my passion. I loved the creative part with the nearly instant gratification of what I had prepared. The possibilities with food are endless and it keeps on giving.

What brought you to South Florida?
Besides the "Eternal Summer" and the beaches, a great job opportunity brought my family and me to Florida.

What’s your favorite way to spend a day off?
Besides my work, I love to travel and explore different cultures and, of course, their food.
Trying to keep myself well and in shape, I often play tennis, and go for long walks and intense exercise.

What’s your ultimate comfort food?
Since I am from Bavaria (Germany), I still love the simple foods, from a great Pretzel, to a crisp Pork Roast, or a classic Wiener Schnitzel. 

Those are just a few. Temptation is everywhere. I just love food - making it and eating it.
And if you put a good European chocolate in front of me, there won't be any sharing!

What’s your signature dish?
It is more so a direction of food that I love to cook, and I couldn't really point out a particular dish. I do make an amazing crab cake. My BBQ baby back ribs have always been a favorite of everyone’s.

And if I had to choose a favorite preparation that has followed me over the past 30 years, it would be a char-grilled branzino with artichokes barigoule.

Be honest…are you a pickleball player yet? 👀
Not really. Though I have played it a few times. I just might get more into it!

If you had to create the ultimate post-match meal, what would it be?
I would stay with nourishing dishes that make you feel good. 

What are you most excited about bringing to Boca Paddle?
Food that makes you feel whole after a good game.
